A imperfect boiling, parboiling, scalding, simmering, opp. ἕψησις, Arist.Mete.381a12, al.; ἀπεψία τις ἡ μ. ἐστι Id.GA776a8; of rapidly growing cereals, ὥσπερ τὰ ἐπὶ τὸ ζέον ἐμβαλλόμενα τῶν ἑψομένων, οὐδεμίαν . . οὐδὲ κἀκεῖνα λαμβάνει μ., i.e. they 'cook' too suddenly, without 'simmering', Thphr.CP4.9.6.
