-εως, ἡ, imperfect boiling, parboiling, scalding, simmering, opp. ἕψησις, Arist.Mete.381a12, al.; ἀπεψία τις ἡ μ. ἐστι Id.GA776a8; of rapidly growing cereals, ὥσπερ τὰ ἐπὶ τὸ ζέον ἐμβαλλόμενα τῶν ἑψομένων, οὐδεμίαν… οὐδὲ κἀκεῖνα λαμβάνει μ., i.e. they 'cook' too suddenly, without 'simmering', Thphr. CP 4.9.6. (Written μώλυσις and μώλυνσις in some codd. of Arist.Mete.379a2,b14, 381a12,22; μόλυνσις in nearly all codd. of Id.Mete.381b14, GA l.c., Thphr. l.c.; cf. μωλύω.)
